I’m trying this recipe today, using a bit less oil and sugar than directed, and I didn’t measure the zucchini, I just used two zucchini. We’ll see how it goes!  

It might look kinda crazy, but this is an insanely easy recipe and very delicious! Definitely recommend! But don’t use mozarella cheese to replace the cheese in the recipe, trust me, it doesn’t work. Try it!

Like I’ve said, I’m trying to limit how much meat I consume, so I’m going to keep these recipes in mind :-)

I just made the tastiest healthiest mini meal… BROCCOLI FRITTERS.

Here’s how ya do it.

Ingredients

  • 3 cups chopped broccoli (1/4 inch cubes, steamed till tender)
  • 1 egg (beaten)
  • 1/2 cup flour (I used bread crumbs as a substitute)
  • 1/3 cup parmasean cheese
  • 1 small clove garlic
  • 1/2 tsp salt
  • Pinch of red pepper flakes
  • 2 tbsp oil

Instructions

  1. Prepare, combine, and lightly mash ingredients. (except the oil)
  2. Oil pan and put on moderate heat. (Flick with water to see if it’s ready… It’ll sizzle)
  3. Plop mixture into 3” rounds, lightly flatten with spatula
  4. Cook for 1-2 mins per side
  5. EAT!

just cooked/ate these!

hella good. comfort food.

but next time, ill add less cheese. kinda makes it too heavy.

Going to make these tomorrow! :D

Clean Eating Prep Ahead: Eggs in Muffin Tins. Simply spray a muffin pan with olive oil cooking spray ( or wipe down each cup with Olive Oil , crack an egg into the cup, add seasoning ( a dash of hot sauce,  salt & pepper, onion powder… ) and a few bits of leftover vegetables. In this case, leftover spinach. If you like, you can use a plastic fork to slightly scramble each egg in the cup.

Bulbasaur, Ivysaur, Venusaur (Pokemon Shot and Cocktails)

Ingredients:
Bulbasaur-
1/2 shot lime vodka
1/4 shot lime juice
1/4 shot melon liqueur 

Ivysaur-
1 shot lime vodka
1 shot lime juice
1 shot melon liqueur
1 shot sprite

Venusaur-
1 Bulbasaur
1 Ivysaur
1 shot lime vodka
1 shot lime juice
1 shot sprite 

Directions:  For the Bulbasaur shot, simply mix all three ingredients into a shot glass.  For the Ivysaur cocktail, shake all alcoholic ingredients, pour over ice in a rocks glass, then add Sprite to fill.  Add a stem of mint as a garnish.  Finally, to evolve to the Venusaur cocktail, shake a Bulbasaur shot together with the alcoholic ingredients of an Ivysaur cocktail, along with an additional shot of lime vodka and lime juice, then pour into a highball glass and fill with Sprite.  Again, add a few leaves of mint as a garnish.
